  6. As it bakes, the goose will begin to acquire a brown tint. To really make sure the goose is ready, tear the sleeve and pierce the carcass. If the knife comes in freely or the legs do not spring and break when stretched, then the goose is ready.
  7. Transfer the finished goose to the dish. From the sleeve, drain fat onto a baking sheet or lay peeled vegetables (potatoes, carrots, etc.) directly in the sleeve and bake them for another 40-50 minutes.
