Ingredients:

For the test:

  • warm milk - 500 milliliters;
  • sugar - 120 grams;
  • salt - 1 teaspoon;
  • chicken egg - 2 pieces;
  • butter - 80 grams;
  • dry yeast - 12 grams;
  • flour - 1 kilogram.

For filling:

  • cabbage - 1 small head of cabbage;
  • onions - 1 piece;
  • quince - 1 piece;
  • butter - 1-2 teaspoons;
  • water - 70 milliliters;
  • vegetable oil.

For lubrication:

  • egg yolks - 2 pieces;
  • cream - 1 teaspoon.

Amazing pies with cabbage. Step by step recipe

  1. To prepare the dough, pre-sifted wheat flour.
  2. We send the dry yeast into warm milk and mix well: until the yeast is completely dissolved in the milk.
  3. Tip: since everyone has different yeast, then how to properly brew one or another yeast, you need to look at the packaging. There are yeasts that are not bred in liquids, but added to dry flour.
  4. We will knead the dough for ideal yeast pies with cabbage using a planetary mixer (hook attachment). If you do not have such a mixer, then you can easily knead the dough with your hands.
  5. Butter pre-melt in the microwave.
  6. In the mixer bowl we place all the ingredients (flour, milk with yeast, salt, sugar, egg, melted butter) for the dough and knead the dough until smooth. The dough turns out quite soft and elastic.
  7. We form the finished dough in the shape of a ball.
  8. We grease the mixer bowl a little with vegetable oil, place the prepared dough in the bowl, cover it tightly with cling film and send it to a warm place for proofing (it takes 1-1.5 hours to proof the dough).

  10. We cut one fresh quince for the filling into four parts, remove the middle, send to the baking sheet.
  11. Bake quince at a temperature of 180 degrees in the oven until soft.
  12. Pour the vegetable oil into the pan and send to the stove to warm up (we use the oils for frying onions to a minimum).
  13. Onions are peeled, washed, cut into small cubes, put into a pan and fry until golden.
  14. To the finished onion in the pan add one tablespoon of butter, mix until the oil is completely dissolved.
  15. Then we put the finished onion in a separate container.
  16. Finely chop the cabbage for the filling.
  17. Fry slaw in vegetable oil in parts (not all together) in a pan.
  18. When we will fry the last portion of cabbage, add baked and diced quince to the pan, cook until cabbage is ready.
  19. We transfer all the fried cabbage into one pan, salt to taste, add water, cover and simmer for 10-15 minutes on low heat.
  20. Cool the finished filling for amazing pies.
  21. Then we crush the dough well, cover it again with a film and send it for repeated proofing.
  22. We divide the finished dough into approximately the same particles.
  23. We take one piece of dough, form small pancakes out of it, put the filling in the middle and pinch the edges of the pie. Thus we sculpt the remaining pies.
  24. Tip: it’s not worth it to file the dough and the table with flour while making pies. The dough does not stick to hands, malleable and wonderful in work.
  25. To grease the pies, egg yolks (it is very good to use homemade eggs) beat until smooth.
  26. Combine the whipped yolks with cream (any cream can be used), and mix everything well.
  27. We send pies with cabbage to a baking sheet covered with parchment paper.
