Today we bake awesome pies with green onions and eggs: like grandmother’s. The pies are very tasty, soft and airy. A lot of toppings, as I like, and quick yeast dough - it is prepared in a few minutes (and even without eggs)! Pies with green onions and eggs: the recipe is simple. No matter how much I try recipes, this is what I always come back to, because for me it is the most successful! We get pies not fried, but in the oven - it is much more healthy and tastier.   • wheat flour - 4 cups;
  • butter (margarine) - 180 grams;
  • dry yeast - 10 grams;
  • salt - 1 teaspoon;
  • sugar - 1 tablespoon;
  • milk (water) - 1 cup;
  • boiled eggs - 6 pieces;
  • green onions - 1 bunch;
  • salt to taste;
  • pepper - to taste;
  • vegetable oil - 2 tablespoons;
  • egg - 1 piece (for greasing pies).

  1. To start cooking pies with green onions and eggs, the ingredients need to be prepared. To work with yeast dough, you must use products at room temperature.
  2. Pre-melt the butter over low heat and let cool to room temperature.
  3. Only milk will need to be heated to a temperature of 36-38 degrees - this is a comfortable temperature for yeast to work. You can, by the way, cook oven pies with green onions and an egg on kefir. It will be tasty too.
  4. The dough is kneading very quickly. In a bowl, mix milk with dry yeast (fresh ones are allowed - 25 grams), add sugar. Stir well, trying to dissolve sugar and yeast.
  5. Next, pour the melted and cooled butter or margarine. Mix again until evenly distributed.
  6. The next step is to add the sifted flour: in small portions, mixing thoroughly.
  7. When the dough becomes thicker, it is allowed to knead with hands on a table sprinkled with flour. For convenience, sprinkle the dough on top too. The dough should turn out, as a result, soft, elastic. Now it does not stick to the table and hands at all.
  8. We collect the dough in a ball, cover or wrap in cling film. We give him twenty minutes to rest. Gluten swells, the dough becomes more uniform and rises slightly during this time.
  9. Prepare the filling while the dough is resting. It can be any, but it’s better not raw: it will prepare the pie faster. Today I use spring filling: green onions with boiled eggs.
  10. Boiled eggs should be diced. You need to boil them in salt water, about five minutes, hard boiled.
  11. Cut a green onion, not very large. The proportions of onions and eggs can be different: something is allowed to take more or less.
  12. Mix everything, salt to taste. You can add ground black pepper for flavor. Pour in vegetable oil: this way the filling will not turn dry. Mix - and the filling is ready.
  13. We take the dough: it does not need to be crushed. This is a very fast yeast dough that does not require long processing and proofing! Divide into equal pieces so that the pies were the same size.
  14. Neither flour nor a knife will be needed for cutting. I tear off the dough with my hands: it does not stick and it’s very convenient to work with it.
  15. We roll the balls out of pieces. We take one, pressing with our fingers, we form an even circle - a cake. In the middle of which we put the filling.
  16. We pinch the edges, forming an even and beautiful pie. By the way, it is allowed to give any form. Let's make a small classic pie.
  17. We will cook pies with eggs and onions in the oven, but it is allowed, of course, to fry them in vegetable oil. We lay out the prepared pies on a baking sheet, which is covered with baking paper. You can simply grease the sheet with oil. Be sure to leave the distance between the pies: they will grow in size. We spread the pies with the seam down.
  18. Lubricate the pie with egg and onion on top: with a brush and one chicken egg, which is pre-shaken with a fork.
  19. Bake in the oven at 200 degrees for 20-25 minutes to a ruddy, mouth-watering top. Previously, the oven must be preheated to the desired temperature.
