Ingredients:

  • eggplant - 6 pieces;
  • water - 3 liters;
  • salt - 3 tablespoons;
  • 5% vinegar - 3 tablespoons;
  • mayonnaise - 500 milliliters;
  • garlic - 3-4 cloves;
  • green dill - 1 large bunch.

Delicious eggplant salad with mayonnaise. Step by step recipe

  1. Washed and dried eggplant peel, be sure to cut the tails. Cut into small cubes, previously cut into several parts. The cubes will then be the same.
  2. Pour water into a large pot and let it boil. Add salt and vinegar to it. We lower the eggplants into the pan, let them boil and cook until tender. It will take about ten minutes.
  3. We discard the cooked eggplants on a sieve: all the water should drain from them - and return them back to the pan.
  4. In still hot eggplants, add all the mayonnaise, which is indicated in our recipe. A real mayonnaise should have a fat percentage of at least 67%: anything less is not suitable for us. Mix thoroughly, cover with a lid on top and let them cool completely.
  5. Peeled garlic is passed through a press and sent to already cooled eggplants.
  6. Dill was washed and dried, finely chopped.
  7. Tip. When buying greens, be sure to choose fresh. Pay attention to whether there are yellow leaves on the dill: if there are any, do not take it, look better in another place. Yellowed dill has long been picked and will be harsh in taste, unlike green.
  8. Pour dill into a blue pan. Mix the salad again and transfer to the salad bowl. That's it, now it can be served to the table.
