A classic recipe for a salad familiar to everyone: a delicious olivier with fresh cucumber. The holiday is not a joy if there is not such a beloved king of salads on the table. A universal recipe in which we add only one product that is not quite traditional for its preparation - fresh cucumber. Thanks to him, the salad will be filled with a new taste and an unusual aroma of freshness and spring.


  • 3-4 medium-sized potatoes;
  • 1 large carrot;
  • 1 head of lettuce;
  • 3 chicken eggs;
  • one fresh cucumber;
  • 4-5 pickled cucumbers;
  • 350 grams of green peas (1 can);
  • 1 chicken breast;
  • mayonnaise, salt and pepper - to taste.

Delicious olivier with fresh cucumber. Step by step recipe

  1. One day before preparing the salad, boil potatoes and carrots. We need them to cool by the time of cooking. To make the vegetables tasty, cook them in salt water: lowering them into the water when it boils.
  2. Fresh chicken eggs (according to the recipe) also cook hard boiled in advance. To make them easy to clean, add 1 tablespoon of salt to the water. After boiling, keep on fire for 15 minutes. Then we drain the water and immediately fill it with cold (this will also help them to easily clean).
  3. Cut potatoes, carrots and eggs into very small cubes. Focus on the pea: all vegetables in the salad should be about the same size.
  4. All sliced ​​products are transferred immediately to the salad bowl.
  5. Very finely chop the onion head (it is best, of course, to use white salad onions). Sent to the salad bowl.
  6. All cucumbers: both fresh and pickled - also cut into cubes. Spread to the rest of the products.
  7. It remains to chop the chicken breast (you can use any other meat if desired). Cook chicken in the evening, in salt water with the addition of bay leaves. During the preparation of the salad, the chicken should be cooled.
  8. From a jar of canned peas, drain the juice and put it in a salad bowl. Mix well. Add mayonnaise just before serving. And even better - to fill in portioned plates. Each to your taste.
  9. You can prepare a mayonnaise dressing: in 2-3 tablespoons of mayonnaise add a pinch of salt and just a little bit of allspice. Stir, let stand a little, so that the pepper transfers its flavor to the sauce - and you can season the salad with Olivier.

  11. For a beautiful and unusual presentation of a classic salad Olivier we will use a small cooking ring. We put it on a plate and fill it to the top with salad, tamping well. Then put another 2-3 tablespoons of salad on top, creating an impromptu top of the hill. We carefully remove the ring and decorate the salad with sprigs of parsley.
