Once, as a guest, I tried a dish with raw mushrooms - it was a very tasty salad with mushrooms champignons. A light salad is prepared quickly, but it turns out - incredibly delicious. A lot of fresh, crunchy vegetables, spicy sweet and sour gravy are a wonderful addition to a daily meal. A lot of vitamins and healthy fiber - exactly what you need for the normal functioning of the body.


  • fresh cucumber - 1 piece;
  • carrots - 150 grams;
  • champignons - 150 grams;
  • onion - 50 grams;
  • apple - 0.5 pieces;
  • Beijing cabbage - 300 grams;
  • olive oil - 120 milliliters;
  • honey - 1 tablespoon;
  • mustard - 1 teaspoon;
  • sweet ground paprika - 1 teaspoon;
  • lemon juice - 2 tablespoons;
  • ground black pepper to taste;
  • salt to taste.

Delicious salad with champignon mushrooms. Step by step recipe

  1. First you need to prepare the sauce: in a bowl, pour the extra virgin olive oil, freshly squeezed lemon juice, salt, pepper, add sweet red paprika powder, honey. Optionally, you can season with aromatic herbs: for example, oregano. All ingredients are mixed well.
  2. In Chinese cabbage we cut the hard part and cut soft leaves with small strips.
  3. Cut the fresh cucumber into thin slices (take a medium size cucumber).
  4. Carrots need to be washed and peeled. Grate.
  5. Peel the onion from the husk and cut into thin quarter rings. It is advisable to take onion salad varieties: purple or white. This onion is more juicy and not very sharp.
  6. Mushrooms - champignons, pour boiling water and immediately remove the skin from the hats.
  7. Cut the mushrooms into plates. We use champignons for our tasty and simple salad, since they are one of the few mushrooms that do not have to be cooked and can be eaten raw.
  8. Tip. In raw form, you can eat only very fresh mushrooms. With a white hat, a solid texture. Look under the head of the mushroom: if there are plates of dark color - it is better not to use such mushrooms.
  9. Half the apple needs to be peeled and grated or finely chopped. It is better to choose apples for salads of non-sweet varieties: for example, Antonovka.
  10. All ingredients: vegetables and fruits - mix and season with our pre-prepared dressing. Easy and tasty vitamin salad with champignons is ready. It can be served before main courses.

With raw mushrooms, I have some very tasty salads. The number of ingredients is arbitrary: you take it at your discretion, focusing on your family. First mushroom salad: with arugula.

  • Wash and clean the mushrooms (as in the previous recipe), cut into thin plates.
  • For this salad we need a small bunch of arugula. We wash it well, dry it and make a pillow: that is, without cutting it, put it on a dish.
  • Tip. It is better to choose a young arugula for salads: it is not stiff and will not be bitter.
  • Spread thinly sliced ​​Parma ham on top of the leaves, then spread the mushroom slices.
  • Pour the dressing over the mushrooms. It consists of 30 milliliters of olive oil, a tablespoon of balsamic or wine vinegar, a teaspoon of mustard (you can use mustard seeds) and soy sauce, which we pour to taste.
  • Mix all the ingredients. On top lay boiled quail eggs, cut in half, washed and dried cherry tomatoes: also halves.
  • Tip. Instead of fresh tomatoes, you can use sun-dried tomatoes.
  • Spread thin slices of parmesan cheese on top.
  • Salad should be served immediately.

Another recipe for a delicious salad with mushrooms.

  • We will need boiled or baked chicken breast, which you need to tear into fibers with your hands.
  • We also tear clean dry lettuce leaves with our hands.
  • Cut the mushrooms into plates.
  • Pickle blue onion separately. To do this, cut half the onion into thin half rings, add a little sugar and salt, a teaspoon of vinegar and pour boiling water over everything. Pickle for about 10 minutes.
  • In the meantime, you need to peel and choose the flesh of the grapefruit: make sure that no seeds are caught.
  • Citrus slices (also hands) are divided into small pieces.
  • In a deep salad bowl we put chicken meat, lettuce, grapefruit, pickled onions, sliced ​​champignons.
  • Mix everything and pour the sauce, which we cook in a blender. For it, we need one yolk, a teaspoon of lemon juice, half a glass of olive oil, a clove of garlic and a teaspoon of mustard. We interrupt everything in a blender, salt and pepper our champignon salad dressing.
  • We pour garlic dressing on a fresh salad with mushrooms.
