Delicious sandwiches with zucchini and tomatoes

A light summer snack with which you can diversify your menu - delicious sandwiches with zucchini and tomatoes. Juicy and vibrant homemade sandwiches are not only an excellent snack, but also the perfect dish for a festive table. A hearty and appetizing vegetable snack is prepared simply and quickly enough. In my family, absolutely everyone loves fast sandwiches, so in the season I cook them every day - and every time a delicious snack flies in an instant.

Ingredients:

  • French baguette - 1 piece;
  • zucchini (or zucchini) young - 2 pieces of a small size;
  • tomatoes - 6 pieces;
  • some flour;
  • mayonnaise - 2-3 tablespoons with a slide;
  • garlic - 2 cloves;
  • salt to taste;
  • ground black pepper to taste;
  • parsley branches - for decoration;
  • vegetable oil for frying zucchini.

  1. At zucchini or zucchini, we cut off the ponytails (we will not peel it, since it is young and tender), cut into circles, about 0.5 centimeters thick.
  2. We put the sliced ​​zucchini in a deep bowl, salt and pepper to taste. Mix well with your hands, remove for a while to the side.
  3. Cooking the sauce. Put 2-3 tablespoons of mayonnaise in a plate (if it is not enough, you can still make it), squeeze out two cloves of garlic in a bowl with mayonnaise through a press (if you like it sharper, take more garlic).
  4. Cut clean tomatoes into thin slices.
  5. Tip. All tomatoes should not be cut right away. It is better to do this in the process of forming sandwiches.
  6. Cut the baguette into slices 6-7 millimeters thick.
  7. To quickly fry all zucchini, it is better to use a deep fryer. If this is not, then you can, like me, do it in a wide pan or in a deep frying pan. It is only necessary to pour into it a large amount of vegetable oil.
  8. In a hot oil we send a batch of zucchini, which we previously roll in flour. While the first batch is fried, we prepare the next: roll all the circles of zucchini in flour.
  9. Spread the fried zucchini on a plate covered with a paper towel.
  10. When all the zucchini cooked, we begin to form homemade sandwiches.
  11. We lay the slices of the French loaf on a flat plate in one layer, on them we put one circle of zucchini.
  12. Lubricate the zucchini with mayonnaise sauce, spread the circles of tomatoes on them.
  13. On the tomatoes we put the second layer of zucchini, which we again coat with mayonnaise sauce.
  14. Tip. Sandwiches made of vegetables can be made tiered: as many layers as you like.
  15. Garnish with parsley.
