Delicious stewed zucchini with vegetables is a dish in which all vegetables are saturated with juices and aromas of each other, but at the same time retaining their shape and color. Homemade stewed vegetables with zucchini is a dish that every housewife should be able to cook. The recipe for stewed zucchini is very simple and does not take much time. In summer, I don’t really want to eat meat (already tired of it during the winter), so I often cook stewed zucchini in the season: a bright and tender summer dish.


  • 2 small young squash (or one large);
  • one carrot;
  • onion head;
  • one ripe tomato;
  • 2 cloves of garlic;
  • salt and spices to taste;
  • a bunch of dill or parsley;
  • vegetable oil - for frying.

  1. We clear one head of onion from the husk and cut into thin half rings.
  2. We send the onions to the pan with warmed vegetable oil (odorless), fry it until transparent.
  3. We clean one large carrot, wash it and rub it on a coarse grater. We shift it into a pan with onions. Stir the vegetables and continue to fry.
  4. My tomato, make a cross-shaped incision, put it in a bowl and pour over boiling water.
  5. Then remove the peel from the tomato, remove the stem and cut into cubes.
  6. We send the tomato to the pan to the vegetables, mix and fry for 2-3 minutes.
  7. Zucchini thoroughly washed, cut the tails, and cut into cubes.
  8. Tip. In young zucchini, the seeds are not removed and the peel is not cleaned. If the zucchini is large, with a thick skin, you need to clean them and remove the seeds.
  9. We spread the zucchini in a pan, mix, salt and add spices to taste. Pepper is also to taste. We cover the pan with a lid and simmer for 15-20 minutes until cooked, stirring occasionally.
  10. Grind the cloves of garlic through a press or rub on a fine grater.
  11. Wash greens (I have a bunch of parsley) and chop finely with a knife.
  12. When the zucchini is cooked, add garlic and chopped herbs to the pan to vegetables. Mix everything and simmer for another 2-3 minutes.
