Delicious Turkish Eggplant

The taste and aroma of eggplant appetizer is just crazy, and you can cook it at home. In the summer season, delicious and tender eggplants can serve as a snack, and as a side dish, and a full second course. Ingredients:

  • 2-3 eggplant;
  • one sweet bell pepper;
  • teaspoon of zira;
  • 20 grams of mint;
  • one kilogram of minced meat;
  • 2 fresh meaty tomatoes;
  • one large head of onion;
  • 2 feathers of green onions;
  • 50-70 grams of greens;
  • several mint leaves (optional);
  • salt and black pepper to taste;
  • 3-4 cloves of garlic;
  • 200 milliliters of tomato juice;
  • 40 milliliters of vegetable oil;
  • 0.5 teaspoon oregano.

Delicious eggplant in Turkish. Step by step recipe

  1. My eggplant, remove the tails, cut into circles 1-1.5 centimeters thick.
  2. We put the eggplant rings in the pan, salt and leave for 20 minutes.
  3. Onion head (one large can be replaced with 2 small ones) is very finely chopped. We send half to minced meat, and half we will use to prepare the sauce.
  4. Add minced meat and pepper, mix everything thoroughly with your hands. For taste, add a pinch of zira to the minced meat.
  5. We clean the tomatoes from the skin (you can pre-pour them with boiling water, it will be easier to remove the skin), remove the stalk. Cut into small cubes.
  6. For sweet bell pepper, remove the seeds and the stalk, also cut into small cubes.
  7. We put tomatoes and peppers in one bowl.
  8. Cut the greens (I have parsley).
  9. Grind the cloves of garlic.
  10. Pour a little vegetable oil into the pan, heat and spread the onion. After the onions are slightly fried (literally 2-3 minutes), put the tomatoes and peppers in the pan.
  11. Stew vegetables over medium heat, stirring occasionally, 7-10 minutes.
  12. Then pour the tomato juice into the pan, salt and pepper to taste. Stir, bring to a boil, spread half the chopped herbs and half garlic, a few mint leaves. Sprinkle oregano.
  13. Mix everything thoroughly, simmer gravy for another three minutes.
  14. From the eggplant, drain the released liquid. We spread eggplant circles in the baking dish (put them on the edge), placing minced meat between them. How to do it beautifully, look at the video under the recipe.
  15. Pour in tomato sauce from a frying pan, level the sauce.
  16. We send the eggplant form to the oven (covered with a lid), heated to 180 degrees. Bake until cooked.
  17. We spread the eggplant appetizer on a plate with the sauce, sprinkle with the remaining herbs and garlic (you need to mix them first).
