The season of fresh vegetables begins, and today for dinner I prepared delicious rolls of young zucchini with cheese filling. It turned out a gentle cold appetizer: quite satisfying and beautiful. Zucchini rolls with greens are prepared very simply, and eaten very quickly. Sweet zucchini and salty cheese filling with aromatic garlic: a rather original, but very tasty contrast.
- 800 grams of squash;
- 150 grams of sour cream;
- 150 grams of mayonnaise;
- 100 grams of flour;
- 1 tablespoon of starch;
- 150 grams of hard cheese;
- one head of garlic;
- dill or parsley;
- vegetable oil for frying;
- salt and black pepper to taste.
Delicious zucchini rolls. Step by step recipe
- For the preparation of rolls, we need young zucchini: wash them, remove the tails, cut lengthwise into strips of a thickness of not more than 0.5 centimeters.
- We mix sour cream and mayonnaise (the proportions can be changed, focusing on your taste).
- Mix the flour in a bowl with starch.
- The head of garlic is divided into slices and peeled.
- Finely chopped dill or parsley (to your taste).
- Pour quite a bit of vegetable oil into the pan (cover the bottom only), heat.
- Blend in a mixture of flour and starch zucchini, spread in a pan. Fry on both sides until golden brown.
- Pass the garlic through a press or rub on a fine grater.
- Rub the cheese on a fine grater.
- In a fairly deep bowl, combine the cheese, garlic, herbs. Season with a mixture of sour cream and mayonnaise, mix thoroughly with a spoon.
- Fried warm (but not hot) strips of zucchini grease the resulting mixture, turn into a roll.
- We put the rolls seam down and fix with a toothpick. Garnish with sprigs of dill or parsley.
Zucchini rolls with cheese and herbs are the most delicious when chilled (and it is better to give them time to stand and soak).
