Eggplant caviar with celery

I will tell you the secret of cooking the most delicious eggplant caviar with celery. You know why eggplant caviar with celery is different from other recipes, because we will not boil eggplant. Ingredients:

  • Eggplant - 3 kilograms;
  • celery root - 1 kilogram;
  • tomatoes - 2 kilograms;
  • vegetable oil - 1 cup;
  • salt to taste.

Step-by-step recipe for eggplant caviar with celery

  1. Cut the eggplants in half, fill them with salt and leave them until juice is formed, then dry and bake in the oven until soft. Then finely chop with a knife.
  2. Slice the tomatoes, and finely chop the celery and onion.
  3. Fry the tomatoes with onions and celery in vegetable oil for 3 minutes.
  4. Salt the mixture that happened, heat to a boil and cook for 30 minutes, add eggplant at the end of cooking and boil for another 5 minutes.
  5. Then pour the resulting caviar into jars and pasteurize them in a pan with water, on the bottom of which lay a tissue, a jar with a capacity of 0.5 liters - 20 minutes, 1 liter - 30 minutes and roll up.
