Ingredients:

For yeast dough:

  • 500 grams of flour;
  • 230 milliliters of milk;
  • 1 teaspoon of granulated sugar;
  • 2 fresh chicken eggs;
  • 20 grams of vegetable oil;
  • 1 teaspoon of yeast;
  • 1 teaspoon without a hill of salt.

For filling:

  • 600 grams of potatoes;
  • 300 grams of onions;
  • 150 milliliters of milk;
  • 120 grams of butter;
  • 300 grams of champignons (can be replaced with minced meat or fish);
  • dill greens - to taste;
  • salt and black pepper to taste.

Vegetable oil for frying a pie - 300 milliliters.

  1. We peel the potatoes, wash them, fill them with water and set to cook. While the potatoes are cooked, knead the dough for homemade pies.
  2. Pour a teaspoon of granulated sugar, 100 grams of sifted flour, a teaspoon of yeast into a deep bowl for kneading dough and mix well.
  3. Pour warm milk (according to the recipe), mix with a whisk until sugar and yeast are completely dissolved.
  4. We cover the sponge with a lid and put it in a warm place for lifting.
  5. Cut the champignon mushrooms into thin strips and transfer them to a bowl.
  6. Finely chop the onions and transfer to a separate bowl.
  7. In a frying pan, melt 60 grams of butter, put the onion in there and fry until it becomes a clear golden color.
  8. Drive two eggs into a bowl, add a teaspoon without a pile of salt, mix with a whisk until the salt is completely dissolved.
  9. Yeast rose "cap": pour the egg mixture into them.
  10. Add vegetable oil and mix with a whisk.
  11. Pour 400 grams of sifted flour, knead the dough first with a spatula, and then with your hands: the finished dough should not stick to your hands. Round the dough into a ball, put in a bowl and cover with a lid. Leave it warm to rise.
  12. From the finished potatoes, drain the water and mashed in mashed potatoes: you can do this in any way convenient for you.
  13. Pour hot milk in a puree in portions (according to the recipe), continuing to knead.
  14. In a pan, melt the remaining 60 grams of butter, spread the chopped mushrooms. After the liquid has evaporated, fry the mushrooms until golden brown. Do not forget to stir occasionally.
  15. Fried champignons are transferred to mashed potatoes, add chopped dill greens, fried onions. Salt and pepper to taste. Mix everything thoroughly.
  16. We’ll prepare the dishes: put a colander on a paper towel, we will transfer the pies into it after frying. We also need a small diameter deep frying pan or stewpan with a thick bottom and 300 milliliters of vegetable oil for frying pies. We immediately pour the oil into the dishes prepared for frying.
  17. Lubricate the rising dough with a small amount of vegetable oil, remove from the bowl and put it on the table. Lightly knead, round and divide into 6 parts.
  18. We cover all the balls of dough with a packet so that they do not wind. We take out one piece and divide each by another 10 parts (we tear off parts of the dough by hand). Roll into 2-3 mm thick circles, put the filling and form pies: pinch first the middle, then the edges, collecting all the coiled dough to the center. Crumple a little hands.
  19. We spread the pies with potatoes and mushrooms in a hot vegetable oil (it turns out that we are deep-fried). Fry on both sides to a beautiful ruddy color, remove it with a slotted spoon and put it in a colander covered with a napkin.
