- eggplant - 5 pieces (approximately 850 grams);
- chicken eggs - 5 pieces;
- cow's milk - 50 milliliters;
- any hard cheese (for example Russian) - 100 grams;
- onions - 1 head;
- garlic - 4 cloves;
- one bunch of fresh herbs;
- vegetable oil;
- salt, pepper to your taste.
Awesome frittata with eggplant. Step by step recipe
- Prepare the eggplant. To do this, wash them and peel them and cut the stalks. Then, on a cutting board, cut into medium pieces. About 2 to 2 centimeters.
- Chop onions finely. We also chop the garlic with a knife finely.
- Take a deep frying pan and pour vegetable oil. We put on the fire. Add onion and garlic. Stirring everything periodically with a spatula, fry for about two minutes over medium heat.
- Then add the eggplant. Mix everything. Cover with a lid and simmer over low heat until cooked.
- Try to mix eggplant more often so that they do not burn. Since they like vegetable oil, they quickly absorb it.
- Then remove the lid, salt and pepper to taste. Mix. Also at this point you can add any spices you like. Then cover and simmer another minute. Then put the pan to the side.
- As soon as the eggplants are turned off, we begin to fill. To do this, take a deep container and drive five chicken eggs into it. Add salt, pepper or spices to taste. Be careful with salt, as we have already salted eggplant and hard cheese can also be slightly salty. Beat everything with a whisk.
- Pour milk to the eggs and pour the hard cheese grated on a fine grater. We mix everything.
- Finely chop a bunch of greens. It can be, for example, parsley. Add it to the fill and mix.
- Then add the eggplants from the pan, do not wait for them to cool. Mix everything carefully.
- Now we need to choose the form in which we will bake. You can take any form that you have. Dip a little vegetable oil to the bottom of the mold and grease the edges with it. Pour the whole mass. Level with a spatula.
