In my family everyone loves eggplant. But the usual caviar and stew are already tired. Yes, and you need to bother with them for a long time. And in the summer, you want to manage the kitchen as quickly as possible. In my cookbook, I found a recipe for great eggplant in 5 minutes. Grilled eggplants are prepared, so they get a very pleasant aroma and unusual taste. And, importantly: such a simple, spicy snack is not at all high-calorie. - eggplant - 1 piece;
- Greek yogurt - 200 grams;
- garlic - 3 cloves;
- cheese - 100 grams;

- Rinse the eggplant and cut the ponytails. Take a good eggplant: it should have gloss, a sufficiently black color and an elastic fruit.
- Cut the eggplant into small rings 1 cm thick. Salt them and leave for half an hour in order to remove all the bitterness.
- We all know that eggplants absorb oil very strongly, and this will later become noticeable on our figure. But we will cope with this problem.
- After half an hour in a hot frying pan, grill, over low heat, fry the eggplant rings on both sides until golden: they should become soft. It is not worth lubricating the grill with any oil. If you do not have a grill pan, use an ordinary pan, but then grease it with vegetable oil.
- If you fry in an ordinary pan with oil, then after frying, blot the eggplant with a paper towel to remove excess fat. Let cool.
- But there is another way to cook eggplant. You can bake eggplant in the oven: it will be even tastier.
- In the meantime, the eggplant is cooling, there is time to cook a delicious spicy sauce.
- Rinse the parsley and chop finely with a knife. If you use a combine or a blender, you get porridge, but we need separate particles. You can add any greens: dill, cilantro, basil, etc. Peel the garlic cloves and pass through a press. You can add more or less to the taste of garlic.
- I grated the cheese on a fine grater. You can also rub on a large one. The main thing is that the cheese is not very hard.
- Add a pinch of salt. Combine parsley, garlic, cheese and Greek yogurt in one bowl. And if you don’t have Greek yogurt, you can use regular thick sour cream. No mayonnaise should be here. Everything is quite low-calorie and useful.
- Add olive oil to the resulting sauce. Mix the resulting dressing.
- Spread the eggplant rings with a thick layer of sauce and spread in a circle.
You can make a salad appetizer by cutting the eggplant into cubes and simply mixing it with dressing. So great eggplants are ready in 5 minutes. You can sprinkle with greens or pomegranate seeds on top. Serve fresh vegetables: tomatoes, cucumbers, bell peppers.
