- medium-sized eggplant - three pieces;
- two onions;
- mushroom seasoning (optional) - one teaspoon;
- sour cream of any fat content - two tablespoons;

- Three eggplants wash well, cut off the stalk of each of them. We also cut off the opposite tip. Cut the eggplant into large cubes. Eggplant peel does not need to be cleaned.
- Put the chopped eggplant in a deep bowl.
- Sprinkle eggplant with salt (about one teaspoon) and mix well by hand.
- Let stand for 5-10 minutes to get bitterness.
- In a capacious frying pan (preferably with high sides) we pour vegetable oil. In this recipe, I use refined sunflower oil. Heat the pan.
- We lay eggplants in a hot pan and fry on low heat for 10 minutes.
- Two medium-sized onions are peeled and diced (not very finely).
- We send prepared onions to the pan. Mix everything with a spatula.
- We fry vegetables on low heat for another 10 minutes, until the onions are transparent.
- Now is the time to add two full tablespoons of sour cream. You can use sour cream of any fat content to your taste. In this recipe I use homemade high fat sour cream.
- Stew eggplant in sour cream (like mushrooms) for 15 minutes.
- Add a teaspoon of mushroom seasoning to the pan. Optionally, this seasoning can be omitted altogether. But I really like the pronounced mushroom taste of the dish.
- Also add a pinch of ground black pepper. Anyone who likes it more sharply can add more pepper to their liking.
- Also, chopped garlic and chopped dill greens can be added to delicious eggplants in sour cream.
- Stew for 2-3 minutes - and the eggplant mushrooms are ready.
