We decided to please ourselves and our relatives with something refined - the recipe for a delicious salad with lentils is what you are looking for. A pleasant combination of arugula with lentils is successfully complemented by a caramelized pear and toasted walnuts, giving the salad a special piquancy.
Ingredients
- green lentils - 200 grams;
- pears - 2 pieces;
- red onion - 100 grams;
- walnuts or cashews - 100 grams;
- lemon juice - 2 tablespoons;
- honey - 1 tablespoon;
- olive oil - 3 tablespoons;
- salt to taste;
- arugula - 200 grams.
Gourmet lentil salad. Step by step recipe
- Rinse the lentils and boil until tender in slightly salted water.
- Rinse the arugula and dab excess moisture with a towel.
- Coarsely chop the walnuts and fry a little in a dry frying pan.
- Peel red onion, cut into slices and simmer lightly in olive oil.
- Remove the skin from the pears, peel, cut into slices and sprinkle with lemon juice. Heat olive oil in a pan. Add honey and heat until completely dissolved. Then put the pears in a pan and caramelize for 2-4 minutes (depending on the hardness and ripeness of the pears).
- In a salad bowl, combine arugula, lentils, onions and season with lemon juice and olive oil.
When serving, put the salad on a plate, garnish with slices of caramelized pear and sprinkle with nuts. The gourmet dish will be a great addition to the main dishes of fish and meat.
