Gourmet Lentil Salad

A pleasant combination of arugula with lentils is successfully complemented by a caramelized pear and toasted walnuts, giving the salad a special piquancy.

Ingredients

  • green lentils - 200 grams;
  • pears - 2 pieces;
  • red onion - 100 grams;
  • walnuts or cashews - 100 grams;
  • lemon juice - 2 tablespoons;
  • honey - 1 tablespoon;
  • olive oil - 3 tablespoons;
  • salt to taste;
  • arugula - 200 grams.

Gourmet lentil salad. Step by step recipe

  1. Rinse the lentils and boil until tender in slightly salted water.
  2. Rinse the arugula and dab excess moisture with a towel.
  3. Coarsely chop the walnuts and fry a little in a dry frying pan.
  4. Peel red onion, cut into slices and simmer lightly in olive oil.
  5. Remove the skin from the pears, peel, cut into slices and sprinkle with lemon juice. Heat olive oil in a pan. Add honey and heat until completely dissolved. Then put the pears in a pan and caramelize for 2-4 minutes (depending on the hardness and ripeness of the pears).
  6. In a salad bowl, combine arugula, lentils, onions and season with lemon juice and olive oil.

When serving, put the salad on a plate, garnish with slices of caramelized pear and sprinkle with nuts. The gourmet dish will be a great addition to the main dishes of fish and meat.
