  • ground crackers (this is dried white bread crushed into crumbs) - 1-2 tablespoons;
  • chicken meat (chicken legs) - 400 grams;
  • bell pepper - 1 piece;
  • onions - 1 piece.

  1. To prepare great eggplant boats with chicken and vegetables, we need two eggplants (the total weight of the eggplants I used is 800 grams).
  2. We cut off the stalks of the eggplant and put them in a deep pan.
  3. Then add salt to the eggplant pan (I add one teaspoon) and fill them with hot water.
  4. We send the pan with the contents to the stove and cook the eggplants until soft (it takes me about 10 minutes to do this).
  5. After this time, we take out the hot eggplant from the water and leave it to cool.

  19. From the middle of the eggplant we cut the flesh (I do it with a knife) and leave the walls of the boats about one centimeter thick. With the remaining eggplant halves, we do the same.
  20. Tip: when cutting the pulp from the eggplant, it is very important not to pierce the eggplant through.
  21. We squeeze out the remaining pulp from eggplant (I do it by hand) and chop it very finely with a knife.
  22. Cut the garlic very finely with a knife.
  23. My fresh parsley is chopped and finely chopped.
  24. In a deep dish we send finely chopped eggplant pulp, add vegetables (onion, tomato and pepper), chicken, chopped parsley, garlic, salt and pepper to taste.
  25. Then add ground crackers to the filling (crumbs from white bread will absorb excess liquid from the filling and the filling for the boats will turn out to be less wet, thicker), and mix well.
