Ingredients:

  • milk (preferably homemade) - 2 liters;
  • sour cream - 400 grams;
  • kefir - 200 grams;
  • egg - 6 pieces;
  • salt - 1 tablespoon.

Hard cheese at home. A step-by-step recipe

  1. Beat eggs, add sour cream. Stir, add kefir.
  2. Put milk on the fire, bring to a boil, immediately add kefir-sour cream mixture to boiling milk.
  3. Stir continuously, boil. Stir until flakes begin to form. My advice to you: if milk does not clot well, add a teaspoon of 9% vinegar.
  4. Cover the colander with cheesecloth folded in four layers. Throw back the resulting mass, wait until all the whey drains. In addition, squeeze the cheese by hand.
  5. Wrap cheese in cheesecloth, tie tightly.
  6. Put a small knot of cheese between two boards, creating a so-called press.
  7. Place a load on top of the boards. 2 kilograms will be enough.
  8. Put the cheese in the refrigerator for 5 hours.

After the specified time, hard cheese is ready at home. Serve the aromatic, home-made cheese that is so tasty and you can eat a lot of it. After all, it is natural and very useful.
