Completely unconventional aspic according to this recipe turns out to be incredibly appetizing and very beautiful: such an original dish will become a real decoration of the festive table.

Ingredients:

  • beef tongue;
  • a pair of leaves of parsley;
  • salt to taste;
  • a teaspoon of gelatin;
  • 3 tablespoons of broth;
  • sprigs of dill - for decoration;
  • one raw medium-sized carrot - for decoration;
  • a piece of pressed horseradish - for decoration.

How to cook and serve a delicious language. Step by step recipe

  1. I wash my tongue and soak in cold water for a couple of hours so that it becomes perfectly clean and all odors are gone.
  2. We shift the tongue into the pan, fill it with cold water, put on fire. Bring to a boil, remove the scum, salt and put the bay leaf.
  3. Cook on low heat until cooked: about 1.5-2 hours.
  4. We take out the finished tongue from the pan (from boiling water) and immediately lower it into a bowl of cold water for 2-3 minutes. Then it can be easily cleaned.
  5. Let the tongue cool completely, remove the sublingual part: cut off with a knife.
  6. We cut the tongue into slices: about 5 millimeters thick.
  7. Take a little broth from the pan (in which the tongue was cooked): about 3 tablespoons - and add a teaspoon of gelatin to it.
  8. Put the broth with gelatin in a bowl of hot water. We wait until the gelatin is completely dissolved.
  9. On a flat serving plate, we lay out pieces of the tongue (in the form of flower petals), each piece is greased with a gelatin solution with a brush.
  10. We give gelatin a little harden, repeat the procedure.
  11. In the middle and between the petals of the tongue we put sprigs of dill.
  12. Using a vegetable peeler, cut the carrots into thin strips, fold, spread in the middle of the flower and grease with a gelatin solution (so that it does not dry out).
