Ingredients:

  • onion - 2 pieces;
  • carrots - 2 pieces;
  • 100 grams of vegetable oil;
  • champignons - 900 grams;
  • bell pepper - 2 pieces;
  • salt - 2 teaspoons;
  • ground black pepper - 0.5 teaspoon;
  • vinegar 7% - 1 teaspoon;
  • granulated sugar - 1-2 tablespoons;
  • three cloves of garlic.

Korean Mushroom Salad. Step by step recipe

  1. Two medium onions (if you have large onions, then one will be enough) to peel, wash well and cut into small cubes.
  2. Wash the carrots for the salad, peel and cut into thin rings (I didn’t take the carrots for the salad very large).
  3. Pour 100 grams of vegetable oil into the pan and put on fire. When the pan warms up well, shift the chopped vegetables into the preheated oil. Fry the onions and carrots over medium heat, stirring constantly, until the carrots are soft. After frying, the onion will become a delicate golden color.
  4. Wipe the champignons with a damp towel and cut into thin slices.
  5. Put the pot with salted water on the fire and bring the contents of the pot to a boil.
  6. Put champignons in boiling water and cook for 5-7 minutes.
  7. Strain the prepared mushrooms and rinse with cold water.
  8. Peel two sweet bell peppers from seeds and cut into strips (I really like if you take multi-colored peppers for salad: yellow and red).
  9. Peel and finely chop three cloves of garlic for mushrooms in Korean using a sharp knife (if you are a fan of spicy food, add a little more garlic).
  10. In a deep salad bowl combine: fried onions with carrots, mushrooms, chopped bell pepper, add two teaspoons of salt, half a teaspoon of black pepper, pour vinegar 7%, put chopped garlic. Mix everything well.
  11. Leave the mushroom and vegetable salad to infuse at room temperature for one hour.

I really like when there are a lot of bell peppers in the salad, so I take large peppers.
