  1. Rinse fresh herbs well and shake off moisture.
  2. Grind finely with a sharp knife.
  3. Crush the cottage cheese with a fork, grate the cheese on a fine grater.
  4. Combine chopped greens with cottage cheese and cheese and mix well. The filling for kutabs is ready.
  5. Now we start kneading the dough: combine the flour with salt and turmeric, mix, and then add boiling water and knead the dough well. Wrap the finished dough in a film for 5-7 minutes
  6. Divide the finished dough into eight approximately equal parts.
  7. Form a round cake from each part of the dough and roll them out using a rolling pin (roll out the dough thinly, how thin the cuts will be).
  8. Put the filling on one half of the tortilla, cover it with the second part of the tortilla, pinch the edges well and walk along the edges of the kutaba with the cloves of the fork or squeeze the edge of the plate (it is important to ensure that as little air as possible is left inside the kutaba).
  9. Fry the cakes in a dry, well-heated frying pan on both sides (ideally, use a cast-iron frying pan. But on Teflon or ceramic, everything will turn out no worse).
