Lenten Dumplings

An excellent versatile dish that can be served as a snack or side dish - lean dumplings. We will cook and serve tasty dumplings with dressings: from mushrooms and greens. An excellent second course option for those who fast or prefer vegetarian cuisine. And all the rest (and me, including), the dumplings will simply remind me of my childhood: my Khokhlushka grandmother often cooked such a dish when there was dough for dumplings. True, they were definitely not lean: this whole omelet was seasoned with sour cream and butter)))

Ingredients:

For fresh test:

  • 2 cups of wheat flour;
  • 0.5 cups of water;
  • 0.5 teaspoon of salt.

For the first refueling:

  • 400 grams of fresh champignons;
  • 2 onions;
  • salt to taste;
  • vegetable oil for frying.

For the second refueling:

  • 3 cloves of garlic;
  • one bunch of fresh dill and parsley;
  • salt to taste;
  • cold pressed vegetable oil.

Lean dumplings. Step by step recipe

  1. From flour, water and salt, knead fresh dough. We remove it in a package and let it lie down: literally, 15-20 minutes.
  2. Ready, fairly cool dough (like dumplings or dumplings), we divide into two parts.
  3. We roll each part into a thin layer - with a thickness of not more than 2 millimeters.
  4. With a glass (or a special mold) we cut out circles.
  5. We start making dumplings (or dummies, as they are also called). Fold each blank in half, fix in the middle. Then we turn the “ears” up and reconnect (in more detail, how to make dumplings correctly, you can watch the video under the recipe).
  6. Boil lean dumplings in salt water: literally, 3-4 minutes. We take out and pour with vegetable oil.

While our dumplings are boiling, we are preparing gas stations.

  1. Cut the onion heads into half rings, and cut the mushrooms or chop them into thin slices.
  2. Mushrooms with onions are sent to a pan with warmed vegetable oil and fry. Salt and pepper to taste.
  3. Put all the ingredients for the second dressing in the blender bowl: garlic, herbs, 5-6 tablespoons of cold-pressed vegetable oil, 2 tablespoons of water. Add spices, salt and pepper to taste. Grind well with a blender.
  4. We put ready dumplings on portioned plates and pour with any sauce (you can also mix two sauces in one plate - it is also very tasty).
