Mushroom Salad Recipe

Mushroom salad is a light, delicious breakfast that energizes you all morning. Today I will offer you a vegetarian recipe that includes healthy mushrooms and vegetables. After all, as you know, they are our best friends who replenish the body with vitamins. The recipe is easy to prepare and takes a minimum of time. Such a salad with champignons is stored for up to four hours without a refrigerator: therefore, you can safely take it with you to work.


  • Chinese or Beijing cabbage - 300 grams;
  • fresh carrots - 150 grams;
  • fresh cucumber - 1 piece;
  • champignons - 150 grams;
  • red or purple onions - 50 grams;
  • half apple;
  • olive oil - 120 milliliters;
  • honey - 1 tablespoon;
  • mustard - 1 tablespoon;
  • ground paprika - 1 teaspoon;
  • lemon juice - two tablespoons;
  • salt - a pinch;
  • pepper to taste.

Salad with mushrooms. Step by step recipe

  1. First make the sauce. Pour olive oil into a glass bowl (I advise using first-pressed oil), add salt, two tablespoons of lemon juice, liquid honey and table mustard. Whisk thoroughly with a whisk.
  2. Tip: if your honey crystallizes, then it can be melted in a water bath.
  3. Tip: to make it easier to get juice from lemon, put it in the microwave for thirty seconds or in a container of hot water, then cool and roll the lemon with your palm on the table. Cut into two parts, insert the fork into one half and thus squeeze the juice.
  4. After that, cut off the white part of the Beijing cabbage and cut it into small strips. We put the mass in a spacious bowl.
  5. Tip. It is better to use fresh cabbage: so that the taste is bright.
  6. My cucumber, cut it in half and not chopped coarsely. Then sent to a bowl of cabbage.
  7. Tip: if you do not like the peel of a cucumber, you can remove it.
  8. Grate fresh carrots on a coarse grater and put in the same container.
  9. Peel the purple lettuce and finely chop it.
  10. Tip: so that the onion does not climb into the eyes, you can clean it under running water.
  11. We put fresh champignons in a small bowl and pour them with boiling water. We take out and remove the skin from the cap: thanks to hot water, the skin is easily removed. Cut the mushrooms into plates and pour into a bowl.
  12. We wash the apple and cut it into two parts, peel it from the skin and core, rub it on a coarse grater above the bowl.
  13. Tip: it is better to take an apple of sweet and sour varieties, with juicy pulp.
  14. Tip: You can use a special knife to remove the core.
  15. All products are thoroughly mixed with a spoon and seasoned with a real sauce.
  16. We transfer the ready salad with mushrooms to the salad bowl and serve
