Peerless eggplant adobo

Ingredients:

  • fresh eggplant - 1500 grams;
  • salt - 15 grams;
  • refined sunflower oil - 80 milliliters;
  • six cloves of garlic;
  • classic soy sauce - 80 milliliters;
  • rice vinegar - 80 milliliters;
  • 1 teaspoon without a slice of ground pepper.

Peerless eggplant adobo. Step by step recipe

  1. Young eggplants are well washed, we cut off the peel from them. Cut the eggplant into large cubes.
  2. We collect the eggplant in a deep bowl, add salt and mix them well with your hands. Let them stand for 20 minutes.
  3. We rinse the eggplants with water, put them in a colander and let the excess liquid drain.
  4. Then pour the eggplant on a clean kitchen towel and blot them.
  5. We put a frying pan on the stove (preferably with a thick bottom). Pour sunflower oil into it and warm it well.
  6. In a hot pan, spread half the cooked eggplant and fry them until browned, with occasional stirring.
  7. In the same way we do with another portion of eggplant.
  8. Cut the garlic with a knife, as small as possible.
  9. We put the chopped garlic in a pan, add one teaspoon without a hill of ground black pepper, classic soy sauce, rice vinegar (or any other vinegar).
  10. We put the pan on the stove, mix, let it boil and cook over low heat for 5 minutes.
  11. We spread the fried eggplant and cook everything together for a few more minutes. Stir occasionally with a spatula.
  12. We lay out the eggplant adobo on a serving dish and serve. It can be served both hot and cold.
