If you are preparing for the holiday, there is very little time and you want to surprise the guests with something new, light and original - prepare snacks on the holiday table from carrots. These amazingly delicate snacks in the form of a bright orange roll will be a wonderful introduction before serving the main dish. They are piquant, fresh, original and very easy to prepare: besides, they are very useful because they contain a large amount of vitamin A.


  • carrots - 2 pieces;
  • Ricotta cheese - 200 grams;
  • dill greens - 100 grams;
  • garlic - 2 cloves;
  • chicken eggs - 4 pieces;
  • vegetable oil - 10 milliliters (for frying);
  • butter - 10 grams (for frying);
  • salt to taste;
  • ground black pepper - to taste.

Snacks on the festive table. Step by step recipe

  1. Washed and peeled carrots should be grated with large holes.
  2. Lubricate the preheated pan with a piece of butter and pour a few tablespoons of vegetable oil.
  3. Stew grated carrots for 15-20 minutes with the lid closed over medium heat.
  4. Salt carrots a little. You can pepper a little with black pepper, and put aside until it cools completely.
  5. In a separate bowl, gently break the eggs and separate the proteins from the yolks.
  6. Proteins must be beaten until foam.
  7. Tip. In order for the whites to whip better, they must first be cooled. And make sure that in no case a drop of yolk gets into the protein.
  8. The cooled carrots must be mixed with the yolks and gently inject the protein foam. Mix gently so that the foam does not settle.
  9. Cover a silicone mat on a baking sheet and evenly distribute the egg-carrot mixture. If you do not have a silicone mat, then you can cover the baking sheet with parchment paper and be sure to grease it with vegetable oil.
  10. We bake a blank for a festive snack for about 10-15 minutes at a temperature of 180 degrees Celsius.
  11. Soft cream cheese "Ricotta" or "Mascarpone" is slightly salted, add chopped dill and garlic squeezed through the garlic: a few teeth.
  12. Tip. Granular dried garlic can also be used for this dressing. It will not be as sharp as fresh cloves of garlic.

Cut the finished snack to the festive table before serving. You can also decorate with sprigs of greens and patterns of cream cheese poured into a pastry syringe or pastry bag. This light vegetarian appetizer can be prepared in advance. Its taste depends on how well it is saturated and infused.

  • For him, you need to take a glass of very finely shabby carrots, a glass of granulated sugar and four eggs, beat all the ingredients well with a whisk or mixer.
  • Add to the mixture one tablespoon of baking powder, a glass of wheat flour and a little cinnamon or a teaspoon of lemon or orange zest. Mix everything thoroughly. The test should have a consistency of thick sour cream.
  • Then pour the dough onto a baking sheet covered with a silicone mat, evenly distribute and bake in the same way as in the previous recipe.
  • When the cake has cooled completely, coat it with cream.
  • To prepare the cream, we need to take a glass of chilled cream and beat it with a glass of granulated sugar. Then put in a creamy mixture of 150 grams of soft cream cheese (you can take any soft cheese) a teaspoon of citrus zest or a little cinnamon, and mix again. Smear the finished carrot cake with cream and spin into a roll.
  • We wrap our carotene roll with film or foil and send it to the refrigerator for several hours.
  • Before serving, the roll must be cut into portioned pieces. You can decorate with sprigs of mint.
