The long-awaited spring came and I remembered a proven summer recipe - zucchini stewed with rice. A delicious and simple lean recipe will appeal to everyone. I love zucchini in any form, I cook a lot of seasonal dishes with them: they are wonderful in a stew, fried, baked form - and even on the grill. There is not much time left: the summer will come - and our recipe will definitely come in handy. The dish is prepared quickly, simply. It is low in calories.
- medium squash - 2 pieces (approximately 1.5 kilograms);
- onions - 1 piece;
- carrots - 1 piece;
- rice - 1-2 tablespoons;
- refined cooking oil

- My zucchini under running water, if their peel is slightly dull or slightly worn - cut it with a knife. We cut our zucchini into small cubes: about 1 to 1 centimeter. We put them in a deep pan, add a little salt, cover with a lid and send to the stove to stew - 15 minutes. During this time, they will start juice, become soft, and will slightly resemble mashed potatoes.
- Choose a pan in which we will cook stewed zucchini with rice, with a non-stick coating. Or one in which vegetables and rice during cooking will not burn.
- While the zucchini is on the stove, proceed to the onion. Dice the onion. We put a pan on the stove, pour no more than two tablespoons of sunflower oil. When the oil has warmed up, we send our onions to brown.
- While the onion is fried, peel the carrots, rub it on a coarse grater and add to the onion. Mix everything with a spatula. Stew everything until golden brown.
- As an option: onions and carrots can not be fried in a pan, but added a little later to raw zucchini (this is an option for a low-calorie dish).
- Take one tomato, wash it, wipe and cut into cubes. Add to the pan to our onions with carrots. Stew for about two minutes, stirring with a spatula so that the tomato starts its juice.
- Now everything in the pan is sent to the pan. Zucchini has already consumed enough of its juice and has become soft. All mix well.
- Rice must be washed with water until the water from it becomes clear. Add it to the vegetables. Mix well and cover. Now you need to simmer until rice is cooked.
- Periodically look after the process: stir with a spatula, make sure that there is always a little water at the bottom. If there is too little water or it will not be at all - rice may burn. Better add quite a bit of water and reduce the heat. Our vegetables with rice, let them languish rather than burn. I had rice cooked for 12 minutes.
- When the rice is ready, we turn to the flavoring additives for our super tasty dish. We take the garlic and cut it into half rings. Grind a small bunch of dill and add everything to our lean dish of zucchini and rice.
- If you don’t want to cook too dietary dish, but strive to feed hearty and high-calorie foods - you can add 2 tablespoons of sour cream (15%) at the end. It will be very tasty and fragrant.
- Now pepper and salt to taste. The dish is ready.
