The best recipe for Khachapuri in Imereti. Step by step recipe

  1. Let's make the dough. First, sift the flour with a sieve into a convenient bowl, make a hole in the center and pour 150 grams of warm water.
  2. Add sugar, mix gently so that the sugar dissolves and the flour intervenes a little.
  3. Pour yeast on top, but do not mix. Cover and leave for ten to fifteen minutes. Then we mix the yeast with water and again leave it for fifteen to twenty minutes (a foam cap should appear during this time).
  4. Next, add warm milk to the dough and proceed to kneading: you need to do this intensively and quickly. So that the dough is soft and keeps its shape, does not spread, you need to gradually add water. Cover the kneaded dough and leave for about twenty minutes: the dough will become viscous and elastic.
  5. Add salt to the dough and gradually mix the vegetable oil. After that, lay out the dough on a clean working surface, knead: stretch it well, fold it, turn it over and make it like this for five to seven minutes.
  6. The dough should be collected in a lump and put in a bowl greased with vegetable oil, cover and leave to ferment. Ready dough should increase in volume.
  7. During fermentation, you need to make several stretches of dough every 40-50 minutes. A broach is a folding of dough from one edge to another and so on in a circle, then you need to turn it over and level the surface. After each broach, cover the dough and leave it in a warm place.
  8. Prepare the filling. Khachapuri needs Imereti cheese, but it can be perfectly replaced with Adyghe cheese, you can add mozzarella, suluguni or feta cheese to it.
  9. You can adjust the amount of cheese to your liking: it is not necessary to take a kilogram, you can use less. If you use more salty varieties of cheese, then you need to put very little salt - or even do without salt.
  10. Add salt to cheese to your taste, mix thoroughly, add eggs, melted butter and mix. The filling should be viscous.
  11. From the cheese you need to make five lumps, cover with cling film and put in the refrigerator.
  12. The final dough must be divided into five parts and assembled into balls. Since the dough is sticky, sprinkle flour on the work surface and hands. You need to work with the test carefully, trying not to crush it much.
  13. The formed dough is covered with cling film and left for twenty minutes.
  14. We proceed to the formation of khachapuri. Take a piece of dough, knead it into a cake, put a lump of cheese in the center. We make a cake, sprinkle a little flour, very carefully collect the edges of the dough to the center and pinch. Then with your hand, gently, from the center to the edges, knead the khachapuri, turning from one side to the other. Excess flour must be shaken off.
  15. On a well-heated (but not hot) pan without oil, spread the khachapuri, trim the pan to the size. When one side is browned, turn over to the other side, and grease the browned with butter. It is advisable to transfer the fried khachapuri to the grate, and then put it on a plate. In this way, fry all khachapuri.
  16. You can cook khachapuri in the oven: put in a mold, put in a preheated oven and bake until browned.
