The best snack: carrot roll with cottage cheese and herbs

Spring, the time of picnics, barbecue and barbecue, I offer an original recipe for relaxation: the best snack is carrot roll with cottage cheese and herbs. Thanks not only to taste, but also to an elegant, bright, orange color, the curd roll with carrots will look great on the festive table. Lush and soft vegetable roll will appeal to both adults and children. For kids, this recipe can be changed a little: make the cottage cheese sweet and add raisins: and then they will eat it at the speed of sound - it’s checked.

Ingredients:

  • 3 medium carrots (400 grams);
  • 300 grams of cottage cheese;
  • 1-2 fresh chicken eggs (we will need only proteins);
  • 5 cloves of garlic;
  • salt to taste;
  • greens of dill, parsley and onions - to taste (about 50 grams);
  • vegetable oil - for frying carrots;
  • hard or soft cream cheese - 50 grams.

The amount of ingredients can be doubled.

  1. Wash carrots, peel and rub on a coarse grater.
  2. We pour a little vegetable oil into the pan, heat it and send the carrots there. A little salt: literally a pinch. Stew, stirring, until the carrots are soft.
  3. We transfer the prepared stewed carrots to a large flat dish so that it cools faster.
  4. Cooking stuffing from cottage cheese and herbs. Press the 5 cloves of garlic with a knife and finely chop. Sent in a separate dish (in it we will mix the filling).
  5. In a bowl with garlic, mash the cottage cheese with a fork and salt a little.
  6. Grind less than half a bunch of greens (you can make a mixture, or choose only one type of greens). Sent in a bowl with cottage cheese.
  7. In fresh eggs, we separate the proteins from the yolks. You can use one or two (at your discretion). Beat the whisk with proteins until stable peaks.
  8. We shift the carrots into a deep salad bowl, sprinkle with grated cheese (hard or melted) on a coarse grater, transfer the whipped whites to it.
  9. We mix everything very carefully.
  10. We cover the baking sheet with parchment paper, put the carrot mass on it and level it first with a spatula, and then with clean hands (so that there are no empty spaces).
  11. We send the pan to the oven preheated to 180 degrees for 15-20 minutes.
  12. Cover the finished carrot cake with a second sheet of parchment, turn it over so that the bottom side is on top. Remove the paper from this side and allow to cool slightly.
  13. On the warm carrot cake we spread the filling, level it, turn the roll.
  14. We roll the roll with cottage cheese and herbs on a plastic wrap and wrap it. We clean in the refrigerator, until the meal.
  15. We cut the finished roll into slices 1.2-2 centimeters thick and put it on a serving dish.

When serving ready-made slices of curd roll, you can pour olive oil on the table - this will give the dish an additional shade.
