The fastest pickled champignon mushrooms are an unusually tasty snack, and a wonderful ingredient for salads, and a great filling for pies, pizza and pancakes. But first of all, we need to pickle the mushrooms themselves. I suggest you choose a quick way to pickle champignons at home: mushrooms turn out to be unusually tasty and fragrant. They can be stored in the refrigerator for a long time, taking out as needed.
- 1 kilogram of champignons (it is impossible to replace with other mushrooms, they are pickled differently);
- 400 milliliters of water;
- 100 grams of vinegar;
- 1 tablespoon of salt;
- 1 tablespoon of sugar;
- 10 pieces of pepper peas;
- 3-4 bay leaves;
- 4-5 cloves;
- 1 bell pepper (preferably red or yellow);
- 3-4 cloves of garlic.

- For pickling, choose the smallest mushrooms champignons. Gently rinse them and cut only the bottom of the leg (you do not need to remove the legs and clean the hats).
- My bell pepper, remove the seeds and the stalk, cut into small cubes.
- We put the pan on the fire, pour in it all the liquid ingredients (according to the recipe).
- Add sugar, salt and all the spices (they give the aroma to the marinade), chopped bell pepper. We do not add garlic at this stage.
- Bring the brine to a boil and pour the mushrooms. At first they will not be completely covered with liquid: it should be so - then champignons will let the juice in and the liquid will increase.
- As soon as the mushrooms boil, we send the garlic cloves, sliced into slices, into the marinade. Let it boil for another 5 minutes under a closed lid.
- We transfer the hot pickled mushrooms into a sterilized liter jar. We close the mushrooms with an ordinary lid, you do not need to roll them up - they are stored for so long: 3-4 weeks in the refrigerator.
