Try the most delicious Cole Slow cabbage salad with a special dressing. This vegetable salad, bright in appearance and taste, spring in mood and rich in vitamins, was prepared in ancient Rome. The original sauce gives the cabbage a unique, delicate, slightly spicy and creamy taste. A simple cabbage salad is prepared in a matter of minutes from the available products - and has not lost its popularity for several centuries.
- 400 grams of white cabbage (you can use Savoy or Beijing);
- 1-2 carrots (medium size).
For the sauce:
- 50 grams of sugar;
- 2 tablespoons of mayonnaise;
- 2 tablespoons of milk;
- 2 tablespoons of kefir;
- 1.5 tablespoons of lemon juice;
- 1 teaspoon of 9% vinegar;
- 0.5 teaspoon of salt;
- 0.3 teaspoon of a mixture of peppers (pink, black, white, green).

- We shred white cabbage (with a knife) with a thin straw. For the same purposes you can use a shredder.
- Tip. For the classic version of the salad, you can combine red and white cabbage.
- On a grater for Korean carrots we rub the washed and peeled carrots.
- Mix the cabbage with carrots in a deep bowl, carefully rubbing it with your hands: this will let the cabbage drain the juice and become softer.
- Tip. We are preparing a salad of cabbage and carrots, as close as possible to the classic Cole Slow, but there are other options for which you can add an apple, celery root, and even pineapple with oranges to the salad.
- In a separate bowl we prepare the original salad dressing. Pour sugar into it, add milk, mayonnaise and kefir.
- Pour 1.5 tablespoons of lemon juice into the sauce (to avoid excess particles, use a strainer to squeeze the juice).
- Add salt and pepper mixture to the mixture (according to the recipe).
- Mix everything well until smooth, pour in 9% vinegar.
- Stir and dress the vegetables with the sauce.
- Tip. Other spices (seasonings) can be added to the basic ingredients for making the sauce: poppy, horseradish, mustard, soy sauce (instead of lemon juice), honey (instead of sugar). Do not be afraid to experiment.
- Let the cabbage salad with carrots infuse in the refrigerator for at least one hour.
- Ready salad can be served immediately, then the cabbage will crunch appetizingly. And you can, as I suggested, after a while: then the salad will become soft. Unlike some other salads, Cole Slow salad only tastes better when infused.
