The dough turns out airy, magnificent, fragrant and so universal: from it it is possible to sculpt various rolls and pies. But how to choose the proportions so that the dough rises and does not fall? How to wrap the filling so that it does not leak from the dough? And most importantly, how to make the pies soft and tender. For many, these questions remain a mystery, but today I will tell you all the secrets. And you will understand that there is nothing easier than the most delicious fried pies with potatoes. This recipe was given to me by my grandmother - it is very simple! The pies are just wonderful.

Ingredients:

For the test:

  • flour - 500 grams;
  • sugar - 1 tablespoon;
  • potato broth - 1 glass;
  • vegetable oil - 3 tablespoons;
  • dry yeast - 1 teaspoon;
  • a pinch of salt.

For filling:

  • potatoes - 1 kilogram;
  • butter - 50 grams;
  • onions - 4 pieces;
  • salt;
  • vegetable oil.

  1. Let's start with the preparation of the filling. We clean the potatoes, wash them, salt them and set them to cook until tender. Let me remind you that when a potato is easily pierced with a knife, it is ready. Drain the broth, but leave one glass for kneading the dough.
  2. We put a generous slice of butter to the boiled potatoes and knead a crush.
  3. We clean the four medium onions, chop into small cubes, fry in vegetable oil until golden brown.
  4. Add the onions to the potatoes and mix. If necessary, salt our filling and let it cool.
  5. In the meantime, we proceed to the preparation of the dough. Sift the flour into a prepared bowl in advance, add sugar, salt, dry yeast to it. Better use instant yeast.
  6. Tip. If you still use fresh yeast, then you can’t cut them with a knife! They will stick to the knife and stick together. They need to be bred only with warm liquid.
  7. Mix the dry mixture well. Add the potato broth.
  8. Tip. In general, when working with the dough, when mixing flour with a liquid, it is important to pour the liquid into the flour, and not vice versa.
  9. The next ingredient is vegetable oil: add three tablespoons of it: it will make the dough more elastic. Now knead the dough, first with a spoon.
  10. When the dough has acquired a homogeneous consistency, we transfer it to the table, previously greased with vegetable oil.
  11. Tip. It is very good to lubricate the table and hands with vegetable oil, not flour. In order not to oversaturate the dough with flour: then the dough will turn out soft, lush, airy.
  12. We continue kneading the dough on the table: the dough is soft, slightly sticky - we will knead using French technology. This is when we pick up the dough, stretch it as much as possible, fold it, turn it over: and so we repeat it again and again, for about 5-7 minutes. But you can entrust this matter to a food processor.
  13. We put the finished dough into a bowl previously greased with vegetable oil. Cover with cling film and leave to double in volume. It takes about 2 hours.
  14. When the dough is enough, grease the table with vegetable oil and carefully lay it on the table. Separate the desired amount: depending on the size of the pie.
  15. Each piece of dough is stretched into a thin cake, on top we apply the filling throughout the dough, except for the edges. The edges must be left to snap the pie.
  16. Connect the edges, put the seam down and make the pie flat. This is done so that the filling does not leak.
  17. One more tip: in order to prevent the filling from flowing out, sprinkle the basis of the test with a pinch of starch.
  18. We form the remaining pies. Prepare the pan: pour vegetable oil on it (it should reach the middle of the pie, about 2 cm).
  19. Put pies on a hot pan and fry on both sides until golden brown. So we fry all the other pies, monitor the oil level, add it if necessary.
  20. We spread the most delicious fried pies with potatoes on a paper towel to remove excess oil.
