A very beautiful spectacular appetizer that looks great on any holiday table - the most delicious liver cake. Absolutely any liver is suitable for cooking: beef, pork, chicken - and the liver, as you know, is a very useful product. Liver cake is a very satisfying snack, and at the same time relatively inexpensive. The liver cake turns out to be high, multi-layer, very beautiful in cut. Delicate liver pancakes are ideally combined with fried vegetables, creamy garlic sauce and fresh herbs.

Ingredients:

  • 900 grams of any liver;
  • one large onion;
  • 200 milliliters of milk;
  • 200-250 grams of flour;
  • 5 fresh chicken eggs;
  • 5 tablespoons of vegetable oil;
  • salt, pepper, nutmeg - to taste.

Filling:

  • 3 large carrots;
  • 3 large onion heads;
  • 200 grams of fresh mushrooms;
  • 50 grams of butter;
  • 200 grams of mayonnaise;
  • 200 grams of butter;
  • garlic.

To decorate:

  • 4-5 hard-boiled eggs;
  • greenery;
  • fresh tomatoes.

The most delicious liver cake. Step by step recipe

  1. To use less oil when frying liver pancakes, it is advisable to use a non-stick pan.
  2. First you need to prepare a dough for liver pancakes.
  3. To do this, skip the liver in a meat grinder or grind with a blender.
  4. Tip. I will cook from chicken liver, but you can take pork or beef. If you will scroll the liver in a meat grinder, then take the grate with the smallest holes.
  5. Next, in the same bowl you need to chop one large onion: just pass it through a meat grinder.
  6. We chopped the liver and onions, we drive in raw eggs, pour in salt, pepper and nutmeg, mix everything thoroughly until smooth.
  7. Pour milk into the mass, stir, and pour the flour in small portions, kneading the dough to a consistency, like on pancakes.
  8. Add vegetable oil to the finished dough and mix well again.
  9. If you want the mass to be more uniform, punch it with a hand blender.
  10. We go to the stove to fry the pancakes.
  11. We set the pan on the stove, warm it well, reduce the heat to medium and proceed to frying the pancakes.
  12. Pour a full ladle of liver dough into the pan and fry the pancake for one minute over medium heat on one side.
  13. Lightly fry it on the second side and transfer to a plate.
  14. From this amount of dough, I got 15 pancakes.
  15. In the meantime, the pancakes are cooling, prepare a vegetable filling for our cake.
  16. To do this, cut onions into a medium cube and put in a bowl.
  17. Rub the carrots on a coarse grater and transfer to a separate bowl.
  18. We cut the mushrooms into a small cube (I have pickled mushrooms, but you can take any mushrooms, fresh, frozen, or even cook the filling without them). Instead of mushrooms, you can use pickled cucumbers.
  19. We shift the chopped mushrooms into a separate bowl and go to the stove to fry all the vegetables.
  20. We set the pan on the stove and heat it well.
  21. Pour in a little vegetable oil and add a piece of butter.
  22. Pour the onion into the pan and, stirring occasionally, fry it until slightly golden.
  23. As soon as the onions begin to fry, pour the mushrooms into the pan and fry with the onions for several minutes.
  24. Then add the carrots, slightly reduce the heat, mix well and simmer our vegetables until the carrots are soft.
  25. The vegetables were stewed, the carrots were soft - and now you can add salt and pepper to the filling.
  26. Mix the vegetables again and transfer them to a separate bowl so that they cool well.
  27. Pancakes and vegetable filling are ready and, while they cool, prepare the sauce.
  28. To do this, grind the garlic in a separate bowl: it can be squeezed out through a press or grated on a fine grater.
  29. Add the cream cheese, mayonnaise, a little salt and pepper to the garlic.

  31. Mix the mass until smooth.
  32. The sauce is ready, set it aside and prepare the decorations for our cake.
  33. In pre-boiled eggs, we separate the proteins from the yolks.
  34. Rub the squirrels on a fine grater and into a separate bowl of yolks.
  35. Finely chop the greens, which must be washed and dried in advance.
  36. All products are prepared, and it's time to start assembling the cake.
  37. We take a plate on which we will serve our cake and lay in layers: pancake, lightly grease it with sauce and spread a full tablespoon of the vegetable filling. Distribute it evenly over the entire surface of the pancake.
  38. Put the pancake, sauce and vegetable filling on top again.
  39. In this sequence we collect the whole cake.
  40. Cover the cake with the last pancake on top, squeeze lightly, grease it with the sauce first on the side, and then on top.
  41. We decorate the cake at our discretion.
  42. I laid out the center of the cake with egg yolk, along the edge with boiled protein, I sprinkled the sides with chopped greens, and laid roses cut out of tomatoes on top of the cake.
  43. It remains to issue leaves of parsley.
  44. We remove the finished cake in the refrigerator for a couple of hours, so that it is well saturated.
