When my family was relaxing in Turkey, we tried an unusual burek with vegetables. This wonderful pie has an interesting, juicy filling, and a very thin puff pastry: with an incredibly crispy crust. In addition, the burek looks very unusual in the context: as if the filling is in the cells. You must also try this.


  • whole grain flour - 400 grams;
  • water - 150 milliliters;
  • vinegar 9% - 1 teaspoon;
  • yolks - 3 pieces (for dough) + 1 piece (for lubrication);
  • garlic - 1 piece;
  • Ricotta cheese - 200 grams;
  • salt - 1 teaspoon;
  • ground black pepper to taste;
  • garlic - 3 cloves;
  • vegetable oil - 2-3 tablespoons;
  • butter - 70 grams;
  • spinach - 150 grams;
  • cream - 30 milliliters.

Unusual burek with vegetables. Step by step recipe

  1. Sift the flour through a sieve. The more times the flour is sifted, the better it is enriched with oxygen and, accordingly, the baking becomes more airy and magnificent.
  2. In warm water, add 9% of vinegar and salt to a teaspoon of vinegar.
  3. We introduce three yolks into the liquid. And mix well, so that the salt dissolves.
  4. Tip. You can add a pinch of sugar: but this is not necessary for the preparation of burek.
  5. We form a hill of flour, and in the middle we make a small depression where we pour the liquid from the eggs and water. Knead the dough.
  6. Tip. It’s not worth pouring all the liquid at once, otherwise it will spill. It’s better to do it gradually.
  7. We form a round ball of dough, well mixed and dense.
  8. The dough for Turkish burek needs to be thrown up and beaten on a hard surface: for example, on a table - about 50-70 times. This procedure will make the dough soft and soft.
  9. We wrap the dough in a plastic bag and leave it so that the dough “rests” and insists.
  10. In the meantime, prepare the filling. Pour the vegetable oil into the pan and put the butter in order to warm up.
  11. In a hot oil, put a few cloves of chopped garlic and passer.
  12. Spinach leaves are thoroughly washed and dried. It is better to take small leaves and necessarily young ones, since overripe spinach will feel bitterness (and coarse stems).
  13. Put the spinach in a pan when the garlic is fried, and let it simmer over low heat.
  14. Salt the spinach filling, season with black ground pepper and transfer to a bowl.
  15. When the spinach has cooled completely, transfer the Ricotta cheese to it. Season the stuffing for burek again, to taste: you can add your favorite aromatic herbs, nuts, dried bell peppers or sun-dried tomatoes. To mix everything.
  16. The settled dough became even softer and a little damp. We divide it into 4-5 parts.
  17. On a table covered with a towel, without flour, roll out one piece of dough with a rolling pin. Stretch out a little rolled dough with your hands.
  18. The dough must be evenly pulled, but in no case break it. The dough for burek in Turkish should become very thin and transparent.
  19. Tip. If the dough is pulled back when pulled, that is, pulled in like rubber, it means that it has stood a little.
  20. We spread our filling on the entire surface of the dough for Turkish burek. Twist the burek with spinach and Ricotta into a roll. Each turn of the dough is smeared with melted butter. From this, the finished baked goods will have a crisp and puff pastry effect. Twist the roll in the form of a snail.
  21. We smear a form or a baking sheet with oil and in the middle we spread our burek with spinach, in the form of a snail.
  22. The same procedure must be done with all parts of the test. And we twist the rolled rolls on a baking sheet in a spiral, continuing our snail.
  23. Whisk the yolk with cream and carefully coat the top of our baking, sprinkle with sesame seeds.
  24. We send to bake in the oven, heated to 200 degrees Celsius: for about 10-15 minutes, until tender.
