Cooking beetroot is easy and simple: no need to stand for a long time at the stove, the most common ingredients that are always at hand. Beetroot is very tasty, aromatic and refreshing.


  • 2 boiled eggs;
  • 2 pieces of boiled potatoes;
  • 2 pieces of boiled beets;
  • 1 fresh cucumber;
  • 5 pieces of radish;
  • 1 small tomato;
  • 100 grams of sausage or meat (optional);
  • 1.7 liters of cold boiled water;
  • salt to taste;
  • sugar to taste;
  • sour cream to taste;
  • citric acid to taste;
  • greens to taste.

Delicious cold beetroot. Step by step recipe

  1. To prepare beetroot, it is necessary to boil water in advance and cool it.
  2. It is not necessary to cook beetroot on the water; you can use kefir, broth, kvass or beetroot broth.
  3. You also need to boil vegetables (potatoes and beets) and hard-boiled eggs in advance.
  4. Tip. To save time, I use a microwave to cook vegetables. I put the washed vegetables in a bag or simply wrap them in cling film, make a few holes with a knife and turn on the microwave: potatoes are cooked for seven minutes, beets - fifteen minutes. Cooking time depends on the capacity of your microwave oven, each one has a different one, so check the readiness.
  5. Peel boiled beets, grate or cut with a knife.
  6. The cooled boiled water must be brought to taste, add salt, sugar and citric acid.
  7. Pour the grated beets into a pot of water.
  8. Prepare the potatoes: they need to be peeled and cut into small cubes. Add chopped potatoes to the beetroot pan.
  9. Boiled eggs are peeled and cut into small cubes. Add the chopped eggs to the vegetables in the pan.
  10. Prepare the radish: it needs to be washed, cut off the ends and cut into small cubes. Put the chopped radish to the ingredients in the pan.
  11. We turn to the cucumbers: they need to be washed, cut off the ends and cut into small cubes. If desired, peel can be cut from cucumbers. Put the chopped cucumber in the pan.
  12. Then we wash the tomato and cut it into small cubes. Add the chopped tomato to the pan to all the ingredients.
  13. If desired, boiled sausage or meat can be added. This will make the beetroot more satisfying. We also cut the sausage or meat into small cubes.
  14. If you want to spice up the dish, then add spices: garlic, black or red ground pepper, paprika. Add one kind of spices or combine several, make to your taste.
  15. Tip. When all the ingredients are added, be sure to try the beetroot and add spices to taste.
  16. If you like greens (onions, cilantro, parsley and dill), then you can chop it and add it to the beetroot.
  17. Before serving, you can add sour cream.
