The lean gazpacho soup, the recipe of which I want to offer you today, is universal. A delicious soup with tomatoes is ideal for those who fast, for vegetarians - and a great option for a cold soup for the hot season: summer is coming. Light, rich in vitamins, but very nutritious.   • 3 pieces of large ripe tomatoes (overripe can be used);
  • 2 small cucumbers;
  • 2 pieces of sweet bell peppers (red, yellow or white);
  • 2-3 cloves of garlic or a small root of ginger;
  • 2-3 tablespoons of olive or linseed oil;
  • salt and pepper to taste.

Lean gazpacho soup puree. Step by step recipe

  1. Finely chopped large tomatoes (I don’t peel them), peeled and chopped ginger root (can be replaced with 2-3 peeled cloves of garlic), put in a blender bowl.
  2. For sweet bell peppers (it is better to use red or some kind of light - so the soup will get a more beautiful color) we remove the stalk, cut into small cubes and send to the blender bowl to the tomatoes.
  3. Finely peeled cucumbers (again for a more beautiful and rich color gazpacho) are finely chopped and put in a blender bowl.
  4. Add olive oil or linseed oil (I take olive oil), a little hot Tabasco sauce (or red pepper). Grind everything with a hand blender.
  5. Salt and pepper the finished soup puree to taste and send to the refrigerator for cooling.
  6. For crackers, we cut the stale loaf or bread (I like to make brown bread, seasoned) into squares and put in the oven, heated to 180-200 degrees, for five minutes.
  7. To serve cold tomato soup, we cut the following products into small cubes: one cucumber (with peel, to contrast with red gazpacho), one green bell pepper and a small head of red lettuce. We lay out the sliced ​​products in separate piles on a plate.

We spread the gazpacho soup in portioned dishes, sprinkle with crackers, vegetables and put a sprig of fresh basil. Raw foodists can add peeled pumpkin seeds to the soup instead of crackers.
