Delicious lazy lagman like mom’s

The first thought, after tasting a delicious lazy lagman (like my mother's): “Such a yummy that I can’t stop.” Mom’s everything is always insanely delicious, so I suggest you cook a lazy beef lagman according to your mother’s recipe. The smell of home comfort, soft egg noodles, a lot of meat and vegetables - it's worth a try: and it's impossible not to fall in love.


  • beef meat (pulp) - 1 kilogram;
  • sweet pepper (medium) - 3 pieces;
  • vegetable oil - 100 milliliters;
  • garlic - 2 cloves;
  • tomato paste - 3 tablespoons;
  • salt, black pepper - to taste;
  • carrots - 2 pieces;
  • onion - 2 pieces;
  • tomato - 1 piece;
  • greens (parsley, dill) - 1 bunch;
  • wheat flour - 1 kilogram;
  • eggs - 3 pieces;
  • water - 1 liter.

Tasty lazy lagman, like mom’s. Step by step recipe

  1. We put the pot or cauldron, in which we will prepare the lazy lagman, on the fire and warm it well.
  2. Add a small amount of vegetable oil and beef, cut into small pieces.
  3. When the meat starts juice, cover the pan with a lid, reduce the heat and continue cooking for about 30 minutes.
  4. Tip: if the meat gave off a little juice, then you just need to add a little water.
  5. While the meat is being cooked, we will take up the preparation of the dough.
  6. Sift flour through a sieve into a deep bowl.
  7. We beat in 3 eggs, add a pinch of salt and gradually add water. Knead the dough. By consistency, it should turn out like a dumpling.
  8. Knead the dough well on the table for 5 minutes. If the dough sticks to your hands, you can add a little flour.
  9. Put the finished dough in a bowl, cover and let it rest for 20 minutes.
  10. Remove the pan with meat from the fire, pour the broth into a separate bowl, and fry the meat. If necessary, add a little vegetable oil.
  11. All vegetables (bell pepper, tomato, carrot, onion) are cut into small cubes. Finely chop the garlic and herbs.
  12. We send chopped onions, carrots to the pot with meat and mix well.
  13. After 2 to 3 minutes, add chopped tomato and half minced garlic.
  14. Then add tomato paste and sweet pepper. Mix.
  15. Fry everything for another 1 - 2 minutes and add the broth (we poured it into a separate bowl).
  16. We also pour water (about 1 liter, or even more), add salt, black pepper to taste, cover the pan with a lid and simmer for 10 minutes over low heat.
  17. Then add the remaining garlic, herbs and remove from heat.
  18. We return to the test. We take it out of the bowl and divide it into two equal parts.
  19. Round off the pieces. One is sent back to the bowl, and the second is rolled out with a rolling pin into a large thin layer.
  20. Sprinkle the dough well with flour and twist our layer into a roll.
  21. Then sprinkle with flour a large baking sheet or flour.
  22. We take a sharp knife and cut the roll from the dough into slices with a thickness of 0.5 - 0.7 centimeters. Then we unwind each piece into long stripes.
  23. So that the stripes of dough (noodles) do not stick together, they need to be sprinkled with flour and put on a plate.
  24. We carry out similar actions with the rest of the test.
  25. Now you need to cook the noodles.
  26. Pour water into a separate pan, add a little salt and a tablespoon of vegetable oil, let it boil.
  27. Throw portions of noodles into boiling water, mix gently and cook until tender.
  28. We wash the finished noodles with running water. In this case, it does not stick together.
  29. In a bowl, put a small amount of ready-made noodles and pour meat with vegetables and broth on top. Optionally, you can decorate with fresh herbs.

Such a lazy beef lagman can be served as a first course (as a soup), if you add more broth, and you can also as a second - if there is very little broth.
